In a medium bowl, whisk together coconut milk, SPLENDA® Stevia Crystal, and vanilla extract. A little bit at a time, slowly whisk in the chia seeds. Continue whisking until fully combined.
Cover and place in the refrigerator for 2-3 hours, or overnight, to allow the pudding to set.
After it is set, spoon into serving dishes and add fresh berries. Garnish with shredded coconut, if desired.
