Turn the heat up high. Once it begins to boil, reduce to a medium heat and cook for a further 30 minutes.

Reduce the heat to low and simmer for 5–10 minutes, until the mixture thickens considerably. Add the lemon juice at this stage. Once the mixture has thickened, it has become jam.

Pour the jam into clean glass jars and seal the lids tightly.
