Set cream cheese on counter for 5 minutes to soften while gathering the other ingredients.
In a medium-sized bowl, use a hand mixer to beat cream cheese until smooth (about 1 minute).
Add in yogurt and beat for another minute.
Stir in the SPLENDA® Stevia Crystal, vanilla, lemon zest, cinnamon, and salt – beat to mix for another minute.
Portion mixture evenly into 8 mini pastry tartlets.
Cheesecakes can be served immediately, but for best taste let them refrigerate for 30 minutes prior to eating.
