    • 200 g plain flour
    • ¼ teaspoon fine salt
    • 77 g unsalted butter, room temperature
    • 12 tablespoons SPLENDA® Granulated


    • 120 g (½ pkg) cream cheese, room temperature
    • 125 ml full-fat sour cream
    • 3 large eggs
    • 125 ml lemon juice
    • 1 tablespoon finely grated lemon zest
    • 12 tablespoons SPLENDA® Granulated

    Preheat oven to 180°C and grease an 8 inch square pan.


    Combine flour, Splenda Granulated and salt. Cut in butter until a rough crumbly texture. Press into prepared pan and bake for 18 minutes. Cool completely before filling.



    Reduce oven temperature to 160°C. In large bowl, beat cream cheese to soften, then whisk in sour cream. Whisk in Splenda Granulated, then eggs, until smooth. Whisk in lemon juice and zest and pour over cooled crust.


    Bake for 25 – 30 minutes, until filling no longer jiggles when pan is moved. Cool to room temperature, then cool for at least 4 hours before slicing.

    Lemon squares will keep up to 4 days refrigerated.
