Preheat the oven to 190°C.
Sift the flour into a large bowl.
Cut the butter and white fat into small pieces, add to the flour and rub in using your fingertips.
Stir in the SPLENDA® Granulated and the egg yolk.
Add 2-3 tablespoons of cold water to bring the dough together.
Knead lightly until smooth.
Roll out the pastry to 5mm (¼ inch) thick and using a 7cm (3 inch) cutter cut 18 rounds, re-rolling the pastry when necessary.
Place the rounds into bun tins that accommodate 18 tarts, and bake for 15-20 minutes until crisp.
Leave to cool and then spoon 2 teaspoons of jam into each one before serving.
- 150g flour
- 40g butter
- 40g lard or white vegetable fat
- 1 tbsp SPLENDA® Granulated
- 1 egg yolk
- 2-3 tbsp cold water
- 12 tbsp sugar free jam
