    Ingredients

    • 1 tbsp vegetable oil spread
    • 300 g medium carrots, peeled, tops trimmed to about 1.5 cm
    • 1 cloves garlic, smashed
    • ⅛ tsp salt
    • ½ tsp freshly ground black pepper
    • 60 ml water
    • ¼ lemon, juiced
    • 1 tbsp chopped fresh tarragon, divided
    • 3 g Splenda Granulated

    Melt vegetable oil spread in a large straight-sided skillet over medium heat. Add carrots and garlic. Season with salt and pepper. Add water, sweetener, lemon juice, and ½ tablespoon tarragon.

    Cook, covered, over medium-low heat for approximately 9 minutes, until the carrots are just tender.

    Remove lid and continue to cook, stirring occasionally, until a thick glaze forms, about 1-2 minutes.

    Top with remaining tarragon and serve.
