    • 1 can (410 ml) lite coconut milk
    • ½ teaspoon pure vanilla extract
    • 43 g chia seeds
    • 175 g fresh berries
    • 6 tablespoons SPLENDA® Stevia Crystal
    • Optional: Shredded coconut, for garnish

    In a medium bowl, whisk together coconut milk, Splenda Stevia Crystal, and vanilla extract. A little bit at a time, slowly whisk in the chia seeds. Continue whisking until fully combined.


    Cover and place in the refrigerator for 2-3 hours, or overnight, to allow the pudding to set.


    After it is set, spoon into serving dishes and add fresh berries. Garnish with shredded coconut, if desired.
