Preheat oven to 200°C. Line a 12-cup muffin tin with paper liners. Lightly spray liners with vegetable cooking spray.
Set aside 12 cherries. Chop the remaining cherries. Place the cherries on a paper towel to drain.
Beat butter and cream cheese at medium speed with an electric mixer until creamy. Add SPLENDA® Stevia Crystal, beating until well combined. Add egg, beat some more until it is blended in.
Add the flour to the butter mixture alternately with the milk, beginning and ending with the flour. Beat at low speed until blended after each addition. Do not over beat. Stir in the chopped cherries. Spoon one tablespoon of batter into each muffin cup. Place a cherry in the center of each cup. Top with the remaining batter, filling muffin cups about ¾ full.
Bake in preheated oven for 25 minutes or until muffins are lightly browned. Remove from the muffin tin immediately, and cool on wire racks.
