    Ingredients

    • 1 egg
    • 6 tbsp melted butter (85 g)
    • ½ cup light yoghurt (140 g)
    • ½ cup light milk (140 g)
    • ½ cup cornflour (70 g)
    • 1 cup plain flour (130 g)
    • 1 tsp salt
    • 1 tsp baking powder
    • ¼ tsp bicarbonate of soda
    • 2.5 cups cornflakes (100 g)
    • 25 tsp Splenda Granulated (12 g)

    Line the base of a wide, shallow cake tin with greaseproof paper.

    In a mixing bowl, beat the egg and Splenda Granulated with an electric mixer. Add the melted butter, yoghurt and light milk; beat briefly to combine. Add the dry ingredients (cornflour, plain flour, salt, bicarbonate of soda and baking powder) and beat again until smooth. Fold in 2 cups of the cornflakes with a spatula.

    Spread the batter into the prepared tin and sprinkle the remaining ½ cup of cornflakes on top.

    Bake in a preheated oven for 30–35 minutes. Remove from the oven and leave to cool for 5–10 minutes before slicing.
