Lemon and Sultana Scones with SPLENDAŽ Strawberry Jam

Serves: 10

Cooking time: 10-12 minutes
Ingredients:
225g/8oz self raising flour
1 level tsp baking powder
50g/2oz polyunsaturated margarine
3 level tbsp SPLENDAŽ Granulated
50g/2oz sultanas
Finely grated zest of 1 lemon
150ml/źpt skimmed milk, 1tbsp reserved

SPLENDAŽ Strawberry Jam:

1kg/36oz strawberries, hulled and quartered
25g/1oz powdered pectin
2 tbsp fresh lemon juice
25g/1oz SPLENDAŽ Granulated
Method:
1 Preheat the oven to 220°C/210°C Fan/Gas Mark 7.
2 Line a baking sheet with non-stick baking parchment.
3 Sift the flour and baking powder into a large bowl. Add the margarine and cut through with a round-ended knife. Using fingertips, rub the margarine into the flour until it resembles breadcrumbs. Stir in the SPLENDAŽ Granulated, sultanas and lemon zest.
4 Mix in the milk to form a soft-dough. Knead lightly to combine. Lightly flour the work surface then roll or press out to approximately 2cm/ž inch thick. Using a 5cm/2inch fluted cutter, make 10 rounds.
5 Transfer to the baking sheet, brush with the reserved milk.
6 Bake for 10-12 minutes until golden and risen.
7 Transfer to a wire rack to cool. Split and serve warm with SPLENDAŽ Strawberry jam.
SPLENDAŽ Strawberry Jam
1 Place all the ingredients plus 2 tbsp water in a heavy based pan and bring slowly to the boil over a low heat. Stir occasionally until the SPLENDAŽ Granulated has dissolved and the juices begin to run.
2 Increase the heat to a rolling boil and boil for 5 minutes.
3 Pour immediately into sterilised jars exercising caution as the jam will be very hot. Seal with a disc of waxed paper directly touching the jam. Allow to cool for 4-5 hours, then cover with a lid or cellophane top. Store in the fridge.

Tip

Try using reduced fat margarine. This will produce a more crumbly, drier scone that is best eaten the same day.

This is a soft set jam so only take out of the fridge as required. Consume within 1 month. Using SPLENDAŽ Granulated means that the jam will not necessarily reach the normal jam set temperature and cannot be tested for set by usual methods.
