Rice Pudding

Serves: 4

Cooking time: 1 hour 30 minutes
Ingredients:
50g/2oz pudding rice
2 tbsp SPLENDA® Granulated
25g/1oz skimmed milk powder
600ml/1pt semi-skimmed milk
1 tsp ground nutmeg
Method:
1 Preheat the oven to 150°C/140°C Fan/Gas Mark 2.
2 In a 1 litre/2pt ovenproof dish, combine the rice, skimmed milk powder, SPLENDA® and milk stirring gently to ensure even distribution.
3 Sprinkle ½ tsp ground nutmeg on top of mixture.
4 Place in oven on middle shelf and bake for 45 minutes.
5 Remove from oven and either stir in the skin that has formed or remove it.
6 Sprinkle the remaining nutmeg on top and return to oven.
7 Bake for a further 45 minutes until golden brown, rice is soft and most of the liquid absorbed.

Tip

Serve hot or cold.
