Banana, Chocolate and Nut Loaf

Serves: 8
Preparation time: 15 minutes
Cooking time: 40-45 minutes plus 10 minutes cooling time
Ingredients:
210g plain flour
11 tbsp SPLENDAŽ Granulated
2 tsp baking powder
1 tsp bicarbonate of soda
4 tbsp 0.2% fat fromage frais
2 tsp vegetable oil
100ml skimmed milk
1 egg
2 large ripe bananas, mashed
1 tsp vanilla extract
8 Maraschino cherries, drained, dried and quartered (optional)
2 tbsp milk chocolate chips
50g walnuts, chopped
Serving Suggestion:
Delicious with a scrape of butter, or if you want to be really naughty chocolate spread. (Not included in Nutrition Information.)  
Method:
1 Preheat oven to 190°C/180°C Fan/Gas Mark 4.
2 Line a 9in x 5in loaf tin with baking parchment.
3 In a large bowl, combine the flour, SPLENDAŽ Granulated, baking powder and bicarbonate of soda.
4 In a medium bowl mash the bananas and vanilla extract, then add the fromage frais, oil, skimmed milk, egg and mix together.
5 Add the milk mixture to the flour mixture. Mix gently just to combine. Fold in the chocolate chips and walnuts and cherry pieces, if using.
6 Evenly spread the batter into the prepared loaf tin. Bake for 40 to 45 minutes or until a thin skewer inserted in the centre comes out clean.
7 Place the loaf tin on a cooling rack for at least 10 minutes. Remove loaf from tin and continue cooling on wire rack. Cut into thick slices to serve.
