Jam Tarts

Jam Tarts are a delicious treat at any time of the year and for any occasion. Make the pastry for these tarts in advance and then fill at the last minute with SPLENDA® Jam. (see 'Three Berry' or 'Plum' SPLENDA® jam recipes)

Makes: 18
Preparation time: 15 minutes (excluding jam making)
Cooking time: 20 minutes (excluding jam making)
Ingredients:
150g (5½oz) flour
40g (1½oz) butter
40g (1½oz) lard or white vegetable fat
1 tbsp SPLENDA® Granulated
1 egg yolk
12 tbsp SPLENDA® jam

Method:
1 Preheat the oven to 190°C/170°C Fan/Gas Mark 5.
2 Sift the flour into a large bowl. Cut the butter and white fat into small pieces, add to the flour and rub in using your fingertips.
3 Stir in the SPLENDA® and the egg yolk.
4 Add 2-3 tbsp cold water to bring the dough together. Knead lightly until smooth.
5 Roll out the pastry to 5mm (¼in) thick and using a 7cm/3in cutter, cut 18 rounds, re-rolling the pastry when necessary.
6 Place the rounds into bun tins that accommodate 18 tarts, and bake for 15-20 minutes until crisp.
7 Leave to cool and then spoon 2 tsp jam into each one before serving.

Tip

You can keep the pastry cases in an airtight container for 2-3 days before adding jam and serving.
