Ingredients:

For the Batter Mixture:

  • 4oz plain flour
  • 1 egg
  • ½ pint skimmed milk
  • 1 tsp SPLENDA® Granulated
  • Olive oil cooking spray

To serve:

  • 1 lemon cut into wedges or lemon juice
  • 8 tsp SPLENDA® Granulated

Method

  1. Put flour into basin and make a 'well' in the middle.
  2. Put egg in 'well', and stir in the flour, adding milk to make a smooth paste.
  3. Beat thoroughly to ensure the mixture is smooth and lump-free.
  4. Add the remaining milk and stir in SPLENDA® Granulated
  5. Using a non-stick frying pan sprayed with olive oil flavoured cooking spray, pour in enough batter to coat the base of the pan.
  6. When the underside is brown, toss the pancake, or use a spatula to turn it over and cook on the other side.
  7. Serve with lemon wedges or juice and sprinkle with SPLENDA® Granulated to taste.
